Secondary Fermentation in bottles.

The stated time for secondary fermentation at 20o plus is 5 days. During the colder weather when the house is colder during the day will this effect the time and most important will it effect the final brew quality.

    The secondary fermentation times in the bottles will be increased if the temperature is cooler, this is very common especially when the weather is cooler. The longer secondary fermentation times will not affect the taste, the priming sugar will take longer to dissolve and ferment, and carbonation will take longer. Ideally you would keep the bottles warm for the first 5 days or so, we stand them on a heater tray if it s quite cold, this just helps the priming sugar to dissolve and start secondary fermentation. If it is cooler then it just needs longer, and as with all brews we suggest leaving in the bottles or at least a good few weeks for the flavours to improve as it conditions. If the brew is flat and lacks taste it needs to be left for longer before drinking, with PET plastic bottles you will feel them go hard as the carbonation increases which is a good sign
