I intend to use plastic 2.5ltr jars for second ferment containers (see photo). How much air space should be left.? They contain 2.5 ltr to the top.

In your final vessel you just need to leave a little space at the top, probably to around your arrow 'A'. It just needs to be airtight too so that the pressure can build up and it will then condition
