Sounds like your brew is going well, the hard bit is waiting once it's in the barrel, but the longer you leave it in there to condition the better the flavours will be, a good few weeks will help it carbonate and condition
Hydrometer readings are a good guide but can be affected by various things and give different readings for various reasons, such as temperature, the time taken to take the reading after brewing, the volume of liquid/quantity of sugar used, discrepancies from reading it, etc. Pretty much all kits will be at the right gravity reading as stated by the manufacturer if the right amount of sugar and water were added, so it's good to check the final readings to ensure the brew has fully fermented and finished beofre moving on ot bottling or kegging.
And you're on to your second batch already, let us know how they turn out wont you....

well have got the nog in the barrel now one more day in the warm
then in to some where cool for afew weeksl.
have also now got the coopers lager in the bucket fermenting well
the og was 1.030 same as the nog
they say the og should be 1.042
is this due to the hardness/softness of the water ?
will let you know how the norfolk nog turns out

have tested the norfolk nog wow brill will leave for afew more weeks now.
have got the coopers lager in barrel and the yorkshire bitter in the tub
all comeing along niceley.
