My red wine is very sweet before 2nd stage of fermenting is this normal.

It varies from wine to wine and what the style of wine is, but the smell and taste in the early stages of making is often not like what you will find the finished wine is like. A wine will develop it's full flavours after being bottled and left somewhere cool and dark for a few weeks, the longer the better for the flavours to properly develop. Leaving it to condition will make sure you drink it at it's best
