Hi there, just recieved from you a finlandia cider kit. I wanted to check out some of the details on the instructions. I may be being incredibly thick but what is a decilitre? It suggests 1 - 3 teaspoons of the yeast lees be added to each bottle. Is these indeed the sediment that has accumilated at the base of the fermenting bin? Perhaps you would be so kind as the explain/confirm these instructions. Many thanks

    As with a few products which are imported, the units of measure and description are not always as clear as they perhaps could be, but to clarify things we would recommend;

    Disregard any unusual units of measure, from the table just add as much sugar as you want based on the volume you are making etc, often it is around 800 grammes of sugar to 23 litres which will be around 4.5% alcohol.

    Adding lees to each bottle or your barrel is not needed, there is enough yeast present in the brew to ensure secondary fermentation, and this will mean you have less sediment in your finished bottles of cider. This is an additional measure they suggest but it is not essential, more of an added measure as a back up.

    When adding the yeast, you can mix it with water first and then add it, but it is common practice for people just to sprinkle the yeast on top and give it a gentle stir to mix. Add the yeast as soon as possible to the fermenting vessel to minimise the risk of contamination.
