It is often best to allow the times the kits instructions recommend, simply because the fermentation may slow right down, but will often continue more slowly and will not cause the airlock to bubble. This does depend on brewing temperatures, but it wont do it any harm to leave it another couple of days to be sure it has completed, before moving on to the next stage. If the instructions suggest a specific gravity reading, you could use your hydrometer to check it is finished and then move on to the next stage, as this helps to be sure
