A few of us here have made the sparkling elder flower champagne, thats a nice easy drink to do. I'll put up a guide soon on the forum in the wine section. I'll put some recipes up there soon too.
Depending on the recipe you're following, it is usually bottled early to make the sparkling finish, but be aware that it should not be bottled in ordinary wine bottles as they are not designed to withstand pressure from carbonation - recycle old Champagne bottles, or use stronger glass bottles, possibly with Champagne corks and cages, or PET plastic bottles with screw caps, or you'll be wearing it not drinking it!
