Hi, started a Canadian Brew 7 days ago, used the enhancer 1 instead of sugar and kept at temp 21, My OG reading was 1.040 and my reading now is 1.016, this takes my ABV to 3.15 which seems abit low, any advice. I'm worried about bottling as the current reading is high. Thanks in advance

The reading does still sound a little on the high side, if it has stopped then maybe give it a stir to re-suspend the yeast and it should drop the last few points. Don't risk bottling until you are sure it is as low as it will go, from an alcohol strength point of view if you have used a full kg of enhancer and made to 40 pints, the brew will always turn out around the guideline strength, helped too by the priming sugar which you will add to each bottle. Variations can occur due to discrepancy in hydro readings, etc, but as long as the fermentation completes and it is primed the brew will turn out at the usual strength

Hi, I've checked today and my hydrometer reading has stayed the same after giving it a stir, do you think I should start the bottling process with the drops. Thanks

Because the temperature is good and it has had a stir to re-suspend the yeast, leave it another day or so to settle again and then if the hydro reading is the same then you could go ahead and bottle it, the reading is close but just a little on the high side, but there may be a reason for this and if it wont go any lower it will be fine to bottle, just don't over-prime it

Thanks, I will be bottling in 500ml bottles so I will use 2 per bottle.

When I stirred it yesterday should I of stired the sedement also, I just stared the liquid. Thanks

Stirring the liquid will often mix some of the sediment back in, the sediment contains some of the yeast and it is this which will help to ensure the fermentation is complete, a gentle stir will usually be fine, if you mix all the sediment back in at this late stage it will take a while to settle again. If it is the same reading tomorrow and reasonable settled, it's time to bottle!

looking forward to this one mine as been bottled 2 weeks , & already tastes good , this waiting is so hard.
