Hi, wondering if anyone can help. I have started making a spirit base kit (vinland) and it stays that it will take 3 weeks to ferment, mine has stopped after 8 days, 4 at 15 degrees and 4 at 22-25. All that I changed is that I added 8kgs of sugar instead of 8.5kgs so I could manage the temperature. Should I leave it for the 3 weeks or start phase 2.
