Hybrid brew

I'm planning a project that ain't exactly a cider, wine or beer. Dry wheat malt extract and dry rice extract with a heap of corn sugar in water with fresh fruit juice. Ferment out dry with champagne yeast, then backsweeten and bottle carbonate. Will the malt and a bit of chemical nutrient give the wee yeasties enough to munch on besides the sugar? Also, if I simmer & squeeze blackberries for juice, would pectic enzyme be recommended?

    Sounds great, add some yeast nutrient just to help the fermentation along, if you perhaps allow the blackberries to steep in some boiled water for a couple of days and then strain it and add the corn sugar and dissolve fully, you could then add the pectic enzyme and leave for 24 hours, then add your yeast and leave to ferment.
