The idea of degassing is to release Co2, if you de-gas until you see no more foam this is usually a good sign, it will often produce a little froth on the surface but this will settle. Removing all the Co2 really helps the wine to clear so it is best to ensure it has all gone
one of the best bits of kit I own. cuts down the de gassing stage by a few days. 2 or 3 blasts for 5 mins on a slow drill speed knocks out all the co2 and the wine clears really quickly afterwards.
